Georgian Food to Remember
"Every Georgian dish is a poem" - Alexander Pushkin

Georgian cuisine encompasses a range of flavors and styles, from fresh vegetables like eggplant and tomatoes, to hearty cheese breads, dumplings and skewered meats. Being located on the Silk Road, Georgia has borrowed from some of the best culinary traditions, near and far. You may notice Persian and Turkish spice flavors, Mediterranean-style salads and even Mongolian-style dumplings.
Food plays a central role in Georgian culture, especially at the Supra table. Georgians will take just about any excuse to have a feast, which might take weeks to prepare for. At a Supra in Georgia, the tablecloth is often not even visible with all the wine and colorful dishes stacked on top of each other. We serve our authentic Georgian food family-style, just as they would at a Supra in Georgia.
Our menu changes from time to time, but you are likely to see most of the following dishes at a community Supra dinner:
Georgian Salad
Kartuli Salata – Fresh tomatoes, crisp cucumbers, bell peppers, red onion and feta cheese, with a bright herb dressing

Beet Salad
Charkhlis Salata – Fresh tomatoes, crisp cucumbers, bell peppers and feta cheese

Eggplant Rolls
Badrijani – Eggplant slices rolled with walnut-garlic paste, topped with pomegranate seeds

Georgian Cheese Bread
Khachapuri – Georgia's famous hand-baked bread filled with melted cheese

Georgian Dumplings
Khinkali – juicy hand-twisted dumplings filled with spiced beef

Chicken & Salmon Skewers
Mtsvadi – Marinated chicken and salmon kebabs grilled over open flame

Stuffed Crêpe
Blinchiki – A crêpe stuffed with soft cheese and drizzled with homemade cherry jam
