Georgian Food to Remember

"Every Georgian dish is a poem" - Alexander Pushkin

Georgian cuisine encompasses a range of flavors and styles, from fresh vegetables like eggplant and tomatoes, to hearty cheese breads, dumplings and skewered meats. Being located on the Silk Road, Georgia has borrowed from some of the best culinary traditions, near and far. You may notice Persian and Turkish spice flavors, Mediterranean-style salads and even Mongolian-style dumplings.

Food plays a central role in Georgian culture, especially at the Supra table. Georgians will take just about any excuse to have a feast, which might take weeks to prepare for. At a Supra in Georgia, the tablecloth is often not even visible with all the wine and colorful dishes stacked on top of each other. We serve our authentic Georgian food family-style, just as they do at a Supras in Georgia.

Our menu changes from time to time, but you are likely to see most of the following dishes at a Seattle Supra dinner:

Georgian Salad

Kartuli Salata – Fresh tomatoes, crisp cucumbers, bell peppers, red onion and feta cheese, with a bright herb dressing
